Carrot Raisin Pineapple Salad

Yield: 4 servings

Ingredients:

  • 1 lb carrots
  • 1/2 cup raisins
  • 1 tbsp honey
  • 1/3 cup pineapple, drained and diced small
  • 1/2 - 3/4 cup mayonnaise

Directions:

  1. Add the raisins to a cup of boiling water for five minutes to plump them up, drain and pat dry on paper towels.
  2. Mix all remaining ingredients together.
